These lemon curd tartlets are made with a layer of pie crust, a silky smooth lemon curd filling, and topped with a fluffy layer of lightly toasted meringue. Instructions. Add the freshly squeezed lemon juice, white sugar, lemon extract, salt, coconut cream, cornstarch and turmeric to a saucepan on medium heat and whisk together. Keep whisking and alternately stirring until it thickens. Whisk even more vigorously when it thickens so that you make sure it’s nice and smooth.
Allow the mixture to reach 180F-185F. It might take a while (10-15 min), so be patient. Take the mixture off the heat, add the lemon zest into the hot mixture to release the oils and mix until combined. Pour through a sieve into another bowl for a smooth curd. Let it cool down then place in the fridge.
